Chicken and Waffle Casserole

Chicken and waffles casserole combines crispy fried chicken, waffles, bacon, cheese, and more to create a delicious chicken casserole overflowing with flavor.

Ingredients

  • 6 frozen waffles
  • 6 large eggs
  • ¼ cup half and half
  • ⅓ cup hot sauce
  • ½ teaspoon red pepper flakes
  • ¼ cup pure maple syrup
  • 6 oz pepper jack cheese shredded
  • ¼ cup bacon bits
  • 2 tablespoon honey
  • 1 teaspoon salt
  • 1 teaspoon coarse black pepper
  • 1 teaspoon garlic powder
  • 1 ½ lb. bag frozen chicken tenders cooked according to directions and cut into 1" cubes

Instructions

  1. Preheat the oven to 400 F
  2. Grease a 9x9" casserole dish or cast iron pan.
  3. Toast waffles on the lowest setting until crispy and hot. Cut the waffles into 1" cubes.
  4. Combine the eggs, half and half, hot sauce, maple syrup, red pepper flakes, honey, salt, garlic powder, and pepper in a bowl.
  5. Layer the chicken, waffles, ½ of the bacon and ½ of the cheese in the pan.
  6. Pour in the liquid mixture. Let the casserole sit for 30 minutes.
  7. Sprinkle the remaining shredded cheese and bacon over the top of the casserole.
  8. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 15 minutes
  9. Garnish with fresh herbs and drizzle with maple syrup or sriracha. Enjoy!

Notes

  • Use REAL maple syrup, NOT pancake syrup for the best flavor.
  • Cut the chicken and waffles into one-inch cubes. This makes it easier to eat but also aids for more even cooking.
  • Change it up using some of our suggestions!
