Ingredients

Chicken and Stuffing
  • 1 chicken 1.5 kg to 1.8 kg - 3.3 lbs. to 4 lbs, whole
  • 150 gms ground meat beef or veal, 5.3 oz
  • 150 gms Italian pork sausage casing removed, 5.3 oz
  • 60 gms prosciutto sliced, 2 oz
  • 60 gms mortadella sliced, 2 oz
  • 50 gms parmigiano reggiano finely grated, 1.75 oz
  • 1 egg
  • 25 ml marsala wine 0.9 oz., or Brandy
  • 35 gms pistachio 1.25 oz
  • 15 gms bread sandwich, 0.5 oz
  • 1 pinch nutmeg
  • salt to taste
  • black pepper to taste
Roasting
  • 2 garlic cloves
  • 2 rosemary sprigs
  • 4 sage leaves
  • 2 bay leaf
  • ½ tbsp garlic powder
  • ½ tbsp paprika
  • 100 ml white wine 3.5 oz
  • 1 chicken stock cube
  • 40 ml water 1.4 oz
  • 2 red apples cored and sliced in 6 or 8 pieces
  • olive oil extra virgin, to brush
  • salt ground, to taste
  • black pepper ground, to taste
