Ingredients
Chicken and Stuffing
- 1 chicken 1.5 kg to 1.8 kg - 3.3 lbs. to 4 lbs, whole
- 150 gms ground meat beef or veal, 5.3 oz
- 150 gms Italian pork sausage casing removed, 5.3 oz
- 60 gms prosciutto sliced, 2 oz
- 60 gms mortadella sliced, 2 oz
- 50 gms parmigiano reggiano finely grated, 1.75 oz
- 1 egg
- 25 ml marsala wine 0.9 oz., or Brandy
- 35 gms pistachio 1.25 oz
- 15 gms bread sandwich, 0.5 oz
- 1 pinch nutmeg
- salt to taste
- black pepper to taste
Roasting
- 2 garlic cloves
- 2 rosemary sprigs
- 4 sage leaves
- 2 bay leaf
- ½ tbsp garlic powder
- ½ tbsp paprika
- 100 ml white wine 3.5 oz
- 1 chicken stock cube
- 40 ml water 1.4 oz
- 2 red apples cored and sliced in 6 or 8 pieces
- olive oil extra virgin, to brush
- black pepper ground, to taste
- salt ground, to taste
