Ingredients
- 4 cups Cilantro Lime Rice, divided
- 2 cups romaine lettuce, rinsed and shredded, divided
- 1½ cups fajita veggies, divided
- 1 can (15.25 ounces) black beans, drained and rinsed, divided
- 1 cup monterrey jack cheese, divided
- 2 cups chipotle chicken, cubed and divided
- 1 cup pico de gallo, divided
- sour cream, for topping (optional)
- guacamole, for topping (optional)
Instructions
- Set out six bowls. Evenly add rice, lettuce, veggies, beans, cheese, chicken, and pico de gallo to each bowl.
- Top with sour cream and guacamole (if using) and enjoy!
