  • 1 tablespoon + 1 teaspoon taco seasoning divided
  • 1/2 white onion diced
  • 2 cloves garlic minced, fresh
  • 1 cup black beans either rinsed canned or dried and cooked
  • 2 cups brown rice cooked
  • 1 cup Roma tomato diced
  • 1 avocado sliced or diced

  • cilantro chopped, optional, fresh

Instructions

    Cup of Yum
  1. Add 1 tablespoon of olive oil to a small bowl and add 1 tablespoon of taco seasoning. Mix well. Add chicken to the bowl and coat with taco seasoning and oil evenly on both sides of the two pieces. Set aside.
  2. Heat a sauté pan to medium and add 1 teaspoon of olive oil. Add onion and garlic and sauté for 1-2 minutes. Add black beans and 1 teaspoon of taco seasoning and sauté for another 3-4 minutes. Remove from pan and set aside.
  3. Add 1 more teaspoon of olive oil to sauté pan and add chicken. Cook on medium on one side for 4 minutes, flip and finish cooking on the other side for another 3-4 minutes until internal temperature of the chicken reaches at least 165° F.
  4. Meanwhile, add 1 cup of brown rice to each bowl, top each bowl with 1/2 cup of tomatoes, 1/2 of the black bean and onions, 1/8 cup of cheddar cheese, 1/2 avocado.
  5. When chicken is done, slice and then add to rice bowls. Drizzle with Copycat Cafe Yumm Sauce and finish with chopped fresh cilantro and a squeeze of fresh lime, if desired.
  6. Mix well and enjoy!

Notes

  • Prepare the bowls ahead for meal prep; store assembled or in separate components in the fridge for up to 4 days.
  • Freeze without the Yumm Sauce for up to 3 months to maintain texture quality.
  • Substitute chicken with tofu or tempeh, and use your preferred taco seasoning brand or homemade mix.
  • Use canned or freshly cooked black beans; other beans like chickpeas or pinto are alternative options.
  • Swap brown rice with white rice or premade minute rice for quicker preparation.
  • Enhance the bowl with extras like guacamole, corn, or tortilla chips according to taste.
  • To melt cheese fully in the bowl, warm the rice briefly in the microwave before adding cheese.
