Chicken Burrito Yumm Bowls
Description
Chicken Burrito Yumm Bowls feature seasoned chicken breasts coated in taco seasoning and olive oil, cooked in a sauté pan until fully done. Simultaneously, black beans are sautéed with onion, garlic, and taco seasoning to develop flavor. The bowls start with a base of cooked brown rice, topped with fresh diced Roma tomatoes, avocado slices, shredded cheddar cheese, and the warm black bean mixture. Sliced chicken is added last, and the bowls are finished with a drizzle of Copycat Cafe Yumm Sauce, fresh cilantro, and a squeeze of lime to add brightness.
The dish combines textures from tender chicken, creamy avocado, melted cheese, and hearty rice and beans. It provides a balanced meal that can be prepared ahead and either stored assembled or in components for freshness. The seasoning used plays a major role in the flavor, imparting Mexican-inspired spices.
This bowl works well as a meal prep option, offering flexibility to swap ingredients like chicken for tofu or tempeh, and allows for personal additions such as guacamole, corn, or tortilla chips. The Yumm Sauce ties the components with its unique taste, but can be substituted or omitted depending on preference.
Prepared batches last up to 4 days in the fridge and freeze well without the sauce. Reheating can be done carefully to preserve the textures. Using premade rice speeds preparation if needed. Melting the shredded cheese by briefly microwaving the rice before assembly ensures a creamy texture.
Ingredients
- 1 lb chicken breast or 1 large breast halved
- 1 tablespoons + 2 teaspoons olive oil divided
- 1 tablespoon + 1 teaspoon taco seasoning divided
- 1/2 white onion diced
- 2 cloves garlic minced, fresh
- 1 cup black beans either rinsed canned or dried and cooked
- 2 cups brown rice cooked
- 1 cup Roma tomato diced
- 1 avocado sliced or diced
- 1/4 cup cheddar cheese or more!, shredded
- Copycat Cafe Yumm Sauce
- cilantro chopped, optional, fresh
- lime optional, fresh, wedges
Instructions
- Add 1 tablespoon of olive oil to a small bowl and add 1 tablespoon of taco seasoning. Mix well. Add chicken to the bowl and coat with taco seasoning and oil evenly on both sides of the two pieces. Set aside.
- Heat a sauté pan to medium and add 1 teaspoon of olive oil. Add onion and garlic and sauté for 1-2 minutes. Add black beans and 1 teaspoon of taco seasoning and sauté for another 3-4 minutes. Remove from pan and set aside.
- Add 1 more teaspoon of olive oil to sauté pan and add chicken. Cook on medium on one side for 4 minutes, flip and finish cooking on the other side for another 3-4 minutes until internal temperature of the chicken reaches at least 165° F.
- Meanwhile, add 1 cup of brown rice to each bowl, top each bowl with 1/2 cup of tomatoes, 1/2 of the black bean and onions, 1/8 cup of cheddar cheese, 1/2 avocado.
- When chicken is done, slice and then add to rice bowls. Drizzle with Copycat Cafe Yumm Sauce and finish with chopped fresh cilantro and a squeeze of fresh lime, if desired.
- Mix well and enjoy!
Notes
- Prepare the bowls ahead for meal prep; store assembled or in separate components in the fridge for up to 4 days.
- Freeze without the Yumm Sauce for up to 3 months to maintain texture quality.
- Substitute chicken with tofu or tempeh, and use your preferred taco seasoning brand or homemade mix.
- Use canned or freshly cooked black beans; other beans like chickpeas or pinto are alternative options.
- Swap brown rice with white rice or premade minute rice for quicker preparation.
- Enhance the bowl with extras like guacamole, corn, or tortilla chips according to taste.
- To melt cheese fully in the bowl, warm the rice briefly in the microwave before adding cheese.
