Ingredients
For the Chicken Caesar Salad Wraps
- 2 large chicken breasts
- salt to taste
- cracked black pepper to taste
- cooking spray
- 4 large plain or spinach flour tortillas
- 2 ½ cups chopped romaine lettuce
- ¼ cup Parmesan shavings optional
For the Caesar Salad Dressing
- ½ cup extra virgin olive oil
- 3 tbsp shredded Parmesan
- 2 tbsp PLAIN yogurt
- 1 tbsp fresh lemon juice
- 1 tbsp red wine vinegar
- ¼ tsp garlic granules
- 4 anchovy filets packed in oil chopped
- salt to taste
- cracked black pepper to taste
Instructions
- Using a sharp knife, butterfly the chicken breasts by halving them each down the middle almost the entire way, but still leaving each half connected so they can open up like a book, still in one piece. Flatten the fatter parts of the chicken with the heel of your hand so it cooks evenly, and season well with salt and pepper.
- Heat a large non-stick skillet or frying pan over a medium high heat. Spray with cooking spray and cook the chicken for a few minutes on each side until it is golden and cooked through. Remove from the heat and set aside.
- To make the dressing blitz the olive oil, shredded parmesan, yogurt, lemon juice, red wine vinegar, garlic granules and anchovies in a bullet blender or mini chopper until smooth. Season to taste with salt and pepper.
- Slice the chicken and divide between the wraps along with the romaine lettuce, parmesan shavings and the dressing.

Notes
- The parmesan shavings are a delicious addition, but you can leave them out for a lighter wrap.
- If you can find smoked garlic granules, they’ll add more flavor to the Caesar dressing.
- Both the chicken and the dressing for these wraps can be made up to 3 days ahead so they’re great for meal prep - the chicken tastes good either warm or cold.
