Chicken Caruso
Quick to make and surprisingly nutritious, this Chicken Caruso is the perfect weeknight meal for any occasion.
Ingredients
- 4 cups chicken broth
- 1 cup elbow macaroni uncooked, or corkscrew pasta
- 2 lices Bacon
- 1/4 cup green pepper (finely chopped)
- 1/3 cup onion (finely chopped)
- 2 cups chicken chopped, cooked, or turkey
- 2 cups old cheddar cheese (grated)
- 1/4 cup pimiento
- 1/4 cup almonds slivered
- 1 cup pea (frozen)
- 3 tablespoons cooking sherry
Instructions
- In a saucepan bring the chicken broth to a boil. Add the macaroni and cook for 10 minutes until tender. Do not drain
- In a large skillet fry the diced bacon until crisp. Add the green pepper and the onion and cook until the onion is tender. Drain off any excess fat.
- Stir in the macaroni - broth mixture and the remaining ingredients. Heat it through, then serve.
