Chicken Caruso

Quick to make and surprisingly nutritious, this Chicken Caruso is the perfect weeknight meal for any occasion.

Ingredients

  • 4 cups chicken broth
  • 1 cup elbow macaroni uncooked, or corkscrew pasta
  • 2 lices Bacon
  • 1/4 cup green pepper (finely chopped)
  • 1/3 cup onion (finely chopped)
  • 2 cups chicken chopped, cooked, or turkey
  • 2 cups old cheddar cheese (grated)
  • 1/4 cup pimiento
  • 1/4 cup almonds slivered
  • 1 cup pea (frozen)
  • 3 tablespoons cooking sherry

Instructions

  1. In a saucepan bring the chicken broth to a boil. Add the macaroni and cook for 10 minutes until tender. Do not drain
  2. In a large skillet fry the diced bacon until crisp. Add the green pepper and the onion and cook until the onion is tender. Drain off any excess fat.
  3. Stir in the macaroni - broth mixture and the remaining ingredients. Heat it through, then serve.
