Ingredients

  • 2 tbsp avocado oil
  • 1 tsp sesame oil
  • 1 ½ tbsp fresh ginger grated
  • 3 cloves garlic minced
  • 1 lb chicken breast diced in ½ inch pieces
  • 1 red pepper diced
  • 2 cups broccoli florets
  • 2 tbsp soy sauce
  • 20 dry roasted salted cashews chopped

Instructions

  1. In a large frying pan, heat half of the avocado oil and sesame oil with the garlic, ginger, and diced chicken breasts.
  2. Cook until the ingredients are browned and the chicken is cooked through.
  3. Transfer the cooked chicken to a plate then set it aside for now.
  4. Using the same pan, add the remaining avocado and sesame oils with the broccoli and red pepper.
  5. Cook for about three minutes.
  6. Add the cooked chicken along with the soy sauce to the frying pan.
  7. Continue to stir the mixture constantly for about 5 to 10 minutes, or until the vegetables have become tender and the mixture is heated through.
  8. Sprinkle the chopped cashews on top.
  9. Transfer to a plate, serve, and enjoy!
