Chicken Cauliflower Rice Casserole
This casserole blends cooked chicken and cauliflower rice seasoned with taco spices and combined with yogurt or sour cream to create a creamy filling topped with melted mozzarella. Baking at 400ºF melts the cheese and slightly browns it on top, giving a warm hearty dish that balances protein and vegetables. The texture is creamy and tender, with fresh garnishes available to brighten the dish when served.
Ingredients
- 4 cups chicken breast chopped, cooked
- 4 cups cauliflower rice
- 1 tbsp taco seasoning
- 1 cup PLAIN yogurt or sour cream
- 1 cup mozzarella cheese shredded
- salt to taste, kosher salt
- black pepper to taste, kosher salt
- cilantro to serve, optional, fresh chopped cilantro to garnish, lime wedges

Instructions
- Preheat the oven to 400ºF.
- In a large bowl, mix the chicken, cauliflower rice, taco seasoning, and yogurt or sour cream. Mix well, then stir in half of the shredded mozzarella.
- Transfer the mixture to a baking dish and spread with a spatula. Top with the remaining shredded cheese.
- Bake for around 30 minutes, or until the top is golden and the cheese is melted inside and out.
- Serve with fresh chopped cilantro, and garnish lime wedges, if you'd like. Add salt and pepper to taste.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days.
- Reheat reheated portions in the oven at 350°F for 10 to 15 minutes, or microwave individual servings for 1 to 2 minutes.
- Freezing this casserole is not recommended as it may affect texture and quality.
