Chicken Cauliflower Rice Casserole

This casserole blends cooked chicken and cauliflower rice seasoned with taco spices and combined with yogurt or sour cream to create a creamy filling topped with melted mozzarella. Baking at 400ºF melts the cheese and slightly browns it on top, giving a warm hearty dish that balances protein and vegetables. Ingredients

  • 4 cups chicken breast chopped, cooked
  • 4 cups cauliflower rice
  • 1 tbsp taco seasoning
  • 1 cup PLAIN yogurt or sour cream
  • 1 cup mozzarella cheese shredded
  • salt to taste, kosher salt
  • black pepper to taste, kosher salt
  • cilantro to serve, optional, fresh chopped cilantro to garnish, lime wedges

Instructions

  1. Preheat the oven to 400ºF.
  2. In a large bowl, mix the chicken, cauliflower rice, taco seasoning, and yogurt or sour cream. Mix well, then stir in half of the shredded mozzarella.
  3. Transfer the mixture to a baking dish and spread with a spatula. Top with the remaining shredded cheese.
  4. Bake for around 30 minutes, or until the top is golden and the cheese is melted inside and out.
  5. Serve with fresh chopped cilantro, and garnish lime wedges, if you'd like. Add salt and pepper to taste.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days.
  • Reheat reheated portions in the oven at 350°F for 10 to 15 minutes, or microwave individual servings for 1 to 2 minutes.
  • Freezing this casserole is not recommended as it may affect texture and quality.
