Ingredients
- ⅓ cup chicken flour (dehydrated chicken powder) or use my chicken flour recipe
- 2 large eggs
- 2 tablespoons salted butter melted
- ½ cup shredded mozzarella optional
Instructions
- Whisk together the melted butter and eggs, add the chicken flour and mozzarella (if using) and mix until fully combined.
- Preheat the waffle maker as per the manufacturer's instructions. Let the batter sit for about 2 minutes while it preheats. The batter will thicken.
- Grease the waffle iron with some butter as needed, quickly mix the batter again and pour or spoon onto the hot waffle machine (it makes 2 medium/large waffles).
- Cook the chaffles for 3-5 minutes until golden. Don't open the machine to check until steam stops rising from the sides, or the waffles might break.
