Chicken Chow Mein

Ingredients

Chicken Chow Mein
  • 1 tablespoon sesame oil, or canola
  • 1 pound boneless skinless chicken breasts, sliced into thin pieces
  • 1 clove garlic, minced
  • 2 cups coleslaw mix
  • 1 pound chow mein noodles, refrigerated or dry
  • green onions, chopped
Sauce
  • 1/4 cup low-sodium soy sauce
  • 1/4 cup chicken broth
  • 2 teaspoons sesame oil
  • 2 tablespoons oyster sauce
  • 2 teaspoons freshly grated ginger, or ginger paste
  • 2 tablespoons light brown sugar
  • 1 tablespoon cornstarch

Instructions

  1. Prepare 1 pound chow mein noodles, according to package instructions.
  2. In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1/4 cup chicken broth, 2 teaspoons sesame oil, 2 tablespoons oyster sauce, 2 teaspoons freshly grated ginger, 2 tablespoons light brown sugar, and 1 tablespoon cornstarch.
  3. Heat 1 tablespoon sesame oil, in a large pan or wok on high heat. Add the sliced 1 pound boneless skinless chicken breasts, and stir fry until just cooked through. Add 1 clove garlic, and cook for 30 more seconds.
  4. Add 2 cups coleslaw mix and stir fry for 1-2 minutes or until cabbage has wilted.
  5. Add the noodles and sauce and cook for 1-2 minutes until the sauce has thickened.
  6. Garnish with green onions, and enjoy!
