Ingredients
Chicken Chow Mein
- 1 tablespoon sesame oil, or canola
- 1 pound boneless skinless chicken breasts, sliced into thin pieces
- 1 clove garlic, minced
- 2 cups coleslaw mix
- 1 pound chow mein noodles, refrigerated or dry
- green onions, chopped
Sauce
- 1/4 cup low-sodium soy sauce
- 1/4 cup chicken broth
- 2 teaspoons sesame oil
- 2 tablespoons oyster sauce
- 2 teaspoons freshly grated ginger, or ginger paste
- 2 tablespoons light brown sugar
- 1 tablespoon cornstarch

Instructions
- Prepare 1 pound chow mein noodles, according to package instructions.
- In a small bowl, whisk together 1/4 cup low-sodium soy sauce, 1/4 cup chicken broth, 2 teaspoons sesame oil, 2 tablespoons oyster sauce, 2 teaspoons freshly grated ginger, 2 tablespoons light brown sugar, and 1 tablespoon cornstarch.
- Heat 1 tablespoon sesame oil, in a large pan or wok on high heat. Add the sliced 1 pound boneless skinless chicken breasts, and stir fry until just cooked through. Add 1 clove garlic, and cook for 30 more seconds.
- Add 2 cups coleslaw mix and stir fry for 1-2 minutes or until cabbage has wilted.
- Add the noodles and sauce and cook for 1-2 minutes until the sauce has thickened.
- Garnish with green onions, and enjoy!
