Chicken Cucumber Tomato Avocado Salad

This easy cucumber tomato avocado salad is tossed with diced chicken, feta cheese, and a zesty balsamic vinaigrette. I love the flavors and it is so perfect for lunch or light, healthy dinner idea.

Ingredients

  • 1.5 cups cooked chicken diced
  • 1 avocado diced
  • 1 large cucumber diced
  • ½ cup cherry tomatoes diced
  • ⅓ cup feta cheese optional
  • ½ cup pecans optional
  • ¼ cup Balsamic Vinaigrette Dressing

Instructions

  1. In a large bowl, all the salad ingredients.
  2. Add the cheese and nuts if using.
  3. Drizzle the balsamic vinaigrette over top and toss gently to mix together.

Notes

  • Use our homemade balsamic vinaigrette or other favorite bottled balsamic dressing.
  • Use shrimp, steak or tofu instead of chicken.
  • Swap the feta for goat cheese, blue cheese or shaved parmesan cheese.
  • Mix in some arugula or baby spinach
  • Use walnuts or sliced almonds instead of pecans.
  • Add diced bell peppers or red onions for even more flavor.
  • Use regular tomatoes and cut into cubes. I like to remove the seeds so the salad isn't as watery.
