This easy cucumber tomato avocado salad is tossed with diced chicken, feta cheese, and a zesty balsamic vinaigrette. I love the flavors and it is so perfect for lunch or light, healthy dinner idea.

Ingredients
- 1.5 cups cooked chicken diced
- 1 avocado diced
- 1 large cucumber diced
- ½ cup cherry tomatoes diced
- ⅓ cup feta cheese optional
- ½ cup pecans optional
- ¼ cup Balsamic Vinaigrette Dressing

Instructions
- In a large bowl, all the salad ingredients.
- Add the cheese and nuts if using.
- Drizzle the balsamic vinaigrette over top and toss gently to mix together.
Notes
- Use our homemade balsamic vinaigrette or other favorite bottled balsamic dressing.
- Use shrimp, steak or tofu instead of chicken.
- Swap the feta for goat cheese, blue cheese or shaved parmesan cheese.
- Mix in some arugula or baby spinach
- Use walnuts or sliced almonds instead of pecans.
- Add diced bell peppers or red onions for even more flavor.
- Use regular tomatoes and cut into cubes. I like to remove the seeds so the salad isn't as watery.
