Chicken Divan Casserole

This easy Chicken Divan Casserole is loaded with tender chunks of chicken and fresh broccoli smothered and baked in a creamy cheese sauce.

Ingredients

  • 4 cups rotisserie chicken chopped
  • 4 cups broccoli florets
  • 2 cups shredded cheddar cheese divided
  • 1 cup heavy cream
  • 8 ounces mascarpone cheese or cream cheese
  • 2 teaspoons Dijon mustard
  • 1 teaspoon olive oil
  • 1 teaspoon Better Than Bullion Chicken
  • 2 cloves garlic minced
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

  1. Add the broccoli florets to a microwave safe bowl, place a plate over the top and microwave for 4 minutes or until the broccoli is just fork tender, but not completely cooked through.
  2. Place the broccoli in a 9 x 13 casserole baking dish that’s been sprayed with olive oil.
  3. Add the chopped chicken into the same casserole, making sure it’s evenly distributed.
  4. Preheat oven to 375°F.
  5. Heat a saucepan to medium, add in the olive oil and garlic.
  6. Sauté for about 15 seconds or until fragrant, but do not brown it or it will become bitter. Add in the salt, ground black pepper, chicken bouillon, mascarpone cheese and heavy cream, then whisk until melted and well combined.
  7. Simmer until the sauce has thickened slightly, then add in half the shredded cheddar cheese.
  8. Pour the sauce over the chicken and broccoli and spread it out evenly.
  9. Top with the remaining shredded cheddar cheese and bake for 25-30 minutes or until the cheese is melted and slightly golden.
