Ingredients
- 1 tablespoon vegetable oil
- 1 small yellow onion, diced (about ½ cup)
- 2 medium carrots, julienned
- 2 ribs celery, diced (about ½ cup)
- 1 teaspoon garlic, minced
- 5 cups (40 ounces) chicken broth
- 1 cup (238 g) heavy whipping cream
- 1 teaspoon ground black pepper
- 16 ounces potato gnocchi, uncooked
- 2 cups (280 g) rotisserie chicken, cubed
- 1 cup (30 g) fresh baby spinach
- Salt, to taste
- Parsley, for garnish
- Parmesan cheese, for garnish
Instructions
- To a large pot over medium heat, add oil. Once hot, add onions, carrots, and celery. Cook until the onions are softened (about 3-5 minutes).
- Add garlic and cook for 1 minute.
- Add chicken broth, heavy cream, and pepper. Bring to a simmer.
- Add gnocchi. Cook for 2-3 minutes, or according to the package instructions. Fully cooked gnocchi will float to the surface when ready.
- Stir in chicken and spinach. Reduce heat to low. Continue cooking until chicken is warmed through and spinach is wilted, about 5 minutes.
- Garnish with parsley and parmesan cheese. Serve warm.
