Chicken Gyro

Ingredients

  • 1 1/2 pounds boneless skinless chicken thighs
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 2 tablespoons red wine vinegar
  • 4 cloves garlic minced
  • 2 1/2 teaspoons dried oregano
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 pita breads
  • 1 1/4 cups Greek yogurt
  • 1 English cucumber grated and drained
  • 1 tablespoon fresh dill chopped
  • 2 cloves garlic minced
  • salt and pepper to taste
  • 1 to 2 tomatoes sliced
  • 1 small red onion thinly sliced
  • fresh lettuce chopped
  • crumbled Feta cheese optional

Instructions

  1. In a bowl, mix olive oil, lemon juice, red wine vinegar, 4 minced garlic cloves, oregano, salt, and pepper. Add chicken thighs and coat evenly. Marinate for at least 1 hour.
  2. Grill the marinated chicken over medium heat for 5 minutes on each side or until fully cooked. Let it rest before slicing.
  3. Combine Greek yogurt, grated cucumber, dill, 2 minced garlic cloves, salt, and pepper in a bowl. Adjust seasonings and chill until ready to use.
  4. Warm the pita breads, then add slices of chicken, tzatziki sauce, lettuce, slices of tomato, and red onion. Sprinkle on optional feta cheese. Fold and serve.
