Chicken Lettuce Wraps

Chicken Lettuce Wraps are full of fresh veggies and ground chicken, drizzled with a savory sweet sauce, and wrapped in fresh, crunchy lettuce.

Ingredients

  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 large cloves garlic grated
  • 1.25 lbs. ground chicken or turkey
  • 1 small zucchini diced
  • 1/2 cup carrot shredded
  • salt to taste
for the sauce-
  • 1/2 tablespoon sesame oil
  • 1 tablespoon seasoned rice vinegar
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 3/4 cup bean sprouts
  • 3 scallions chopped
  • 1/2 cup chopped cashews toasted
  • cilantro for garnish
  • butter lettuce leaves for serving

Instructions

  1. Preheat large nonstick skillet over medium heat. Add in olive oil, onions and garlic. Cook until softened, 3 minutes. Add in ground chicken, zucchini, carrot, salt and pepper. As the meat cooks, break it apart into crumbles.
  2. While the meat is cooking, stir all ingredients for the sauce together in a small bowl.
  3. Once chicken is thoroughly cooked, pour in sauce and cover to simmer 5-7 minutes.
  4. Right before serving, stir in bean sprouts, scallions, cashews and cilantro. Scoop into butter lettuce cups and serve.
