Ingredients

  • 1 tablespoon olive oil for greasing
  • 1 pound ground chicken
  • 1 egg large
  • 1/2 cup breadcrumbs
  • 1/4 cup Parmesan Cheese grated
  • 1/4 cup parsley finely chopped, fresh
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon oregano dried

Instructions

  1. Preheat oven to 400°F and grease a baking sheet with olive oil.
  2. In a large bowl, combine ground chicken, egg, breadcrumbs, Parmesan, parsley, garlic, salt, pepper, onion powder, and oregano. Mix until just combined, being careful not to overwork the mixture.
  3. Lightly oil your hands, then form the mixture into 1-inch balls and place each one on the prepared baking sheet. Bake for 20 minutes, or until the meatballs are cooked through and have an internal temperature of 165°F.
