Ingredients

  • 2 tablespoons olive oil, divided
  • 1 small onion, diced
  • 1 garlic clove, minced
  • 1/4 cup oil packed sun dried tomatoes, chopped
  • 1 teaspoon kosher salt
  • 1 pound Chicken breast, cooked and shredded
  • 1 16 ounce package pasta, cooked
  • 2 tablespoons fresh basil leaves, chopped
  • 1/2 cup mozzarella cheese, shredded
  • 1/4 cup Parmesan cheese, grated

Instructions

  1. Heat 1 tbsp of oil in a large sauté pan over medium heat and cook the onions for 4 minutes.
  2. Add the garlic, sun dried tomatoes and salt and sauté for an additional minute.
  3. Add the pasta, 1 tablespoon of olive oil and the remaining ingredients. Stir to combine until heated through and the cheese begins to melt.
  4. Serve.
