Chicken Panini

Chicken Panini sandwiches feature bite-sized marinated chicken cooked with onions, bell peppers, and tomatoes, topped with mozzarella and spread sauces inside panini bread. Grilling the assembled sandwich results in a slightly charred, warm filling with melted cheese and a toasted bread exterior. This recipe yields multiple sandwiches with balanced savory, tangy, and mildly spicy flavors.

Ingredients

  • 5 bread panini style
  • 500 g chicken Boneless
  • 150 g mozzarella cheese
  • 2 tbsp neutral cooking oil generic cooking oil
  • 1 onion
  • 1 bell pepper
  • 1 tbsp tomato puree
  • tbsp mayonnaise
  • tbsp tomato ketchup
Marination
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp cumin powder
  • 1 tsp garlic paste
  • 1 tbsp soy sauce
  • 1 tsp chili sauce

Instructions

  1. Cut up the boneless chicken into small bite-sized chunks then add into a bowl along with the ingredients for marination (See Note 1).
  2. In a pan heat up 1 tbsp oil on medium heat until hot then add the marinated chicken mixture
  3. Cook for 6-8 minutes until the chicken has changed colour
  4. As the chicken is cooking finely dice the onion and bell pepper then add into the pan and cook for a further 4-5 minutes
  5. Finely dice the tomato then add into the pan along with the tomato puree and cook for another 2-3 minutes
  6. Once the chicken mixture is cooked slice the panini breads lengthwise then add the tomato ketchup and mayonnaise (See Note 2).
  7. Add the chicken mixture to the panini along with mozzarella cheese.
  8. In a grill pan add the oil then brush evenly over the pan and allow to heat up before adding the panini then grill for 2-3 minutes on both side until lightly charred. (See Note 3)
  9. Serve with a side of French fries and enjoy!

Notes

  • Marinate the chicken longer when possible for deeper flavor, although immediate cooking also works.
  • Mayonnaise and tomato ketchup are used in the recipe, but you can substitute or add chili sauce or barbecue sauce based on your taste.
  • This recipe yields five paninis, but smaller portions can stretch it to six.
  • Serving the paninis with French fries complements the sandwich texture and flavor.
