Chicken Paprikash (Paprikás Csirke)

Chicken paprikash (paprikás csirke or csirkepaprikás) is a traditional paprika chicken recipe of Hungarian origin.

Ingredients

  • 4 chicken legs
  • 2 cloves
  • 3 cloves garlic , pressed
  • 2 Red Onions , grated
  • 2 red bell peppers , finely diced
  • 2 tablespoons paprika
  • 3 tablespoons goose fat
  • 2 tomatoes , peeled and diced
  • lukewarm water
  • salt
To finish
  • 6 oz. sour cream
  • 1 tablespoon all-purpose flour
  • ½ squeezed lemon

Instructions

  1. Cut the chicken legs at the joint.
  2. In a large Dutch oven, melt the goose fat over medium heat and add the diced red bell peppers.
  3. While stirring, sear the peppers for 3 minutes.
  4. Add the red onions and garlic and sauté again for 5 minutes, stirring very frequently.
  5. The liquid from the peppers and onions should be completely reduced.
  6. Turn off the heat and add the paprika.
  7. Mix carefully. Add the tomatoes.
  8. Pour over about 4 tablespoons of lukewarm water, mix and place over medium heat.
  9. Add the chicken legs and mix.
  10. Pour over ½ cup (150 ml) of lukewarm water. Season with salt and cover.
  11. Cook over medium heat for 30 minutes.
  12. Lower the heat and cook over medium-low heat for another 30 minutes.
  13. In a large bowl, mix the flour, lemon juice and sour cream vigorously.
  14. Add a little hot juice from the chicken to the paprika and mix again.
  15. Pour this mixture over the chicken and mix.
  16. Cover and cook again for 5 minutes.
  17. Serve with nokedli (Spätzle).
