Chicken Paprikash (Paprikás Csirke)

Chicken paprikash (paprikás csirke or csirkepaprikás) is a traditional paprika chicken recipe of Hungarian origin.

Ingredients
- 4 chicken legs
- 2 cloves
- 3 cloves garlic , pressed
- 2 Red Onions , grated
- 2 red bell peppers , finely diced
- 2 tablespoons paprika
- 3 tablespoons goose fat
- 2 tomatoes , peeled and diced
- lukewarm water
- salt
To finish
- 6 oz. sour cream
- 1 tablespoon all-purpose flour
- ½ squeezed lemon

Instructions
- Cut the chicken legs at the joint.
- In a large Dutch oven, melt the goose fat over medium heat and add the diced red bell peppers.
- While stirring, sear the peppers for 3 minutes.
- Add the red onions and garlic and sauté again for 5 minutes, stirring very frequently.
- The liquid from the peppers and onions should be completely reduced.
- Turn off the heat and add the paprika.
- Mix carefully. Add the tomatoes.
- Pour over about 4 tablespoons of lukewarm water, mix and place over medium heat.
- Add the chicken legs and mix.
- Pour over ½ cup (150 ml) of lukewarm water. Season with salt and cover.
- Cook over medium heat for 30 minutes.
- Lower the heat and cook over medium-low heat for another 30 minutes.
- In a large bowl, mix the flour, lemon juice and sour cream vigorously.
- Add a little hot juice from the chicken to the paprika and mix again.
- Pour this mixture over the chicken and mix.
- Cover and cook again for 5 minutes.
- Serve with nokedli (Spätzle).
