Ingredients
- 2 pounds ground chicken
- ⅓ cup grated parmigiano reggiano
- 2 sundried tomatoes packed in oil (minced)
- ¼ cup minced parsley
- 2 cloves garlic (grated)
- 2 teaspoons oregano
- 2 teaspoons salt
- 1 teaspoon pepper
- ½ teaspoon red pepper flakes (optional)
- 1 cups marinara
- ⅔ cup shredded parmigiano reggiano
Instructions
- Pre-heat oven to 350 degrees. Spray a muffin pan with non-stick spray and set aside.
- In a large bowl, combine first 9 ingredients (ground chicken through red pepper flakes) and mix well. Divide mixture evenly between 12 muffin cups.
- Using a small brush or spoon, spread marinara evenly on all muffin cups then sprinkle each with grated cheese. Bake for 15-18 minutes. Serve immediately.

- If you can’t find ground chicken, ground turkey is a great alternative.
