Ingredients

  • 2 pounds ground chicken
  • ⅓ cup grated parmigiano reggiano
  • 2 sundried tomatoes packed in oil (minced)
  • ¼ cup minced parsley
  • 2 cloves garlic (grated)
  • 2 teaspoons oregano
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • ½ teaspoon red pepper flakes (optional)
  • 1 cups marinara
  • ⅔ cup shredded parmigiano reggiano

Instructions

  1. Pre-heat oven to 350 degrees. Spray a muffin pan with non-stick spray and set aside.
  2. In a large bowl, combine first 9 ingredients (ground chicken through red pepper flakes) and mix well. Divide mixture evenly between 12 muffin cups.
  3. Using a small brush or spoon, spread marinara evenly on all muffin cups then sprinkle each with grated cheese. Bake for 15-18 minutes. Serve immediately.

Notes

  • Store leftovers in an airtight container in the fridge for up to 4 days.
  • If you can’t find ground chicken, ground turkey is a great alternative.
