Ingredients

  • 1 Lb ground chicken
  • 1 large egg
  • 2 Tablespoons mayonnaise
  • ¼ cup onion (finely diced)
  • 2 cloves garlic (diced small, or more to taste)
  • 2 Tablespoons fresh parsley (finely chopped)
  • 1 pinch salt and black pepper (to taste)
  • ¼ cup all-purpose flour
  • ¼ teaspoon poultry seasoning
  • 3 tablespoons vegetable oil

Instructions

    Cup of Yum
  1. In a large bowl add the chicken, egg, mayonnaise, onion, garlic, parsley, salt, and pepper. Mix with your hands until just combined. Do not over mix as this can make them tough.
  2. In a shallow bowl add the flour and poultry seasoning and mix well.
  3. Divide the chicken into 5 or 6 portions and drop one portion at a time into the flour mixture rolling it around to coat all sides and shaping into a flat patty.
  4. In a large skillet over medium high heat and add the oil. Cook the chicken patties for about 5-7 minutes per side until they are golden brown and a minimum internal temperature of 165° is reached.
  5. Serve as a healthier alternative to chicken nuggets, serve with a salad, or they are even great in a bun!
