Chicken Pot Pie Soup

Chicken pot pie soup is full of veggies and tender chicken in a light, creamy broth. It has all the flavors of a pot pie but in half the time.

Ingredients

  • 2 tablespoons olive oil
  • 1 pound chicken breasts boneless, skinless, cubed
  • 1 onion diced
  • 3 stalks celery diced
  • 3 carrots diced
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 32 ounces chicken broth (4 cups)
  • 2 tablespoons cold water
  • 1 tablespoon cornstarch
  • 1 cup frozen peas
  • 1 ½ cups Half & Half
  • 2 tablespoons parsley chopped
  • Biscuits for serving

Instructions

Cook the chicken:

  1. In a large soup pot, heat the oil over medium-high heat. Add the chicken and cook for 3 minutes or until browned on all sides. Remove the chicken from the pot and set it aside on a plate. 
Cook the veggies:
  1. Heat the remaining tablespoon oil over medium-high heat and add the onions, celery, and carrots. Cook for 3 minutes or until the veggies are softened and golden brown.
Combine and simmer:
  1. Add the seasonings, salt, black pepper, chicken broth, and chicken pieces. Bring to a boil, reduce heat, and simmer for 20 to 30 minutes, until the carrots are fork-tender. 
  2. In a small bowl, combine the cornstarch and water. Stir it into the soup along with the half and half and green peas. Continue cooking for another 10 minutes or until thickened. 
Serve:
  1. Serve the soup topped with fresh parsley and a biscuit.
