Chicken Salad Recipe (Keto)

Ingredients
- 3 cups rotisserie chicken breast meat (See Note 1)
- 1/2 cup celery diced (2-3 ribs)
- 3 green onions diced fine (See Note 2)
Dressing
- 3/4 cup mayonnaise
- 1 tbsp Dijon mustard See Note 3
- 2 tbsp fresh lemon juice
- 2 tbsp fresh parsley chopped
- 1 tbsp fresh dill chopped
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Instructions
- In a medium sized bowl whisk together the mayonnaise, Dijon mustard, lemon juice, parsley, dill, salt and pepper.
- Cut the chicken into small cubes and add to the mixing bowl. Add celery, green onions and toss to mix thoroughly. Season to taste.
- Chill or serve immediately over salad greens, in a lettuce wrap, stuffed in a bell pepper, on bread for sandwiches or with crackers.

Notes
- I use rotisserie chicken breast meat from Costco. Typically 2 large chicken breasts cubed will be about 3-4 cups. You can also substitute (3) 12.5 ounce canned, drained).
- Feel free to substitute 1/3 cup diced red onion. To reduce the bite, soak diced red onion in water for 10 minutes and drain before using.
- Yellow mustard or mustard of choice may be substituted.
