Chicken Salad with Cranberries and Walnuts
Homemade Cranberry Walnut Chicken Salad is great for sandwiches or served on top of lettuce.
Ingredients
- 1 pound chicken tenderloin or 1 pound leftover cooked chicken
- 3 ribs celery sliced
- 1 cup walnuts chopped
- 1/2 cup dried cranberries
- 1/2 cup mayonnaise
- 1 teaspoon chicken bouillon powder
- ½ teaspoon black pepper freshly ground
- ½ teaspoon salt
Instructions
- If using raw chicken: Place chicken in a pot and cover with water or broth. Bring to a simmer over medium heat and cook for about 30 minutes until fully cooked. Cool slightly, then shred the chicken and transfer to a large bowl. Make sure the chicken is at room temperature or chilled before mixing the salad together.
- Combine the shredded chicken, celery, nuts, dried fruit, and mayonnaise in a medium bowl. Mix well.
- Season with bouillon powder, salt, and pepper. Taste and adjust seasonings as needed.
