Ingredients

For the salad
  • 4 cups Cooked Chicken Breast diced into bite sized pieces
  • 1/2 cup celery finely chopped
  • 2 tablespoons red onion finely chopped
  • 1 cup red grapes halved
  • 1/2 cup pecans toasted and chopped
  • 2 tablespoons fresh parsley leaves finely chopped
For the dressing
  • 3/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 2 teaspoons lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon sugar
  • salt and pepper to taste

Instructions

For the salad
    Cup of Yum
  1. Place the chicken in a large bowl.
  2. Add the celery, red onion, grapes, pecans and parsley to the bowl.
For the dressing
  1. In a medium bowl, whisk together the mayonnaise, sour cream, lemon juice, mustard, sugar, salt and pepper.
  2. Pour the dressing over the chicken and vegetable mixture. Toss gently to coat, then serve.
