Chicken Satay Noodles
Chicken Satay Noodles feature marinated grilled chicken thighs coated in a smooth peanut sauce with coriander, turmeric, and cumin. The grilled meat is served atop cooked spaghetti tossed with fresh radish, cucumber, lime juice, brown sugar, and mint, creating a balance of savory, spicy, creamy, and bright flavors. Ingredients
- 4 chicken thigh chunked, boneless, skinless
- 3 tablespoons peanut butter creamy
- 3 tablespoons water boiling
- 1 tablespoon fish sauce
- 1 tablespoon Chili garlic sauce
- 1 teaspoon ground coriander
- 1/2 teaspoon Turmeric
- 1/2 teaspoon cumin
- 8 ounces spaghetti pasta cooked
- 10 radish thinly sliced
- 2 cucumber thinly sliced, mini
- 1 lime juiced
- 1 teaspoon brown sugar
- kosher salt to taste
- black pepper to taste
- 1 tablespoon mint minced, fresh
Instructions
- In a medium sized mixing bowl add chunked chicken thighs.
- In a small mixing bowl add peanut butter, boiling water, fish sauce, chili garlic sauce, ground coriander, turmeric, and cumin. Whisk until smooth.
- Pour over chicken and let marinate for at least 4 hours or up to 24 hours.
- When you're ready to make your chicken soak 4 long wooden skewers in water for about an hour.
- Thread an equal amount of the meat onto the skewers.
- Grill on a preheated grill for about 10 minutes or until the chicken is fully cooked.
- While the chicken rests make your noodles.
- In a medium sized mixing bowl add cooked noodles, radishes and cucumbers.
- In a small bowl whisk together lime juice, brown juice, kosher salt and black pepper.
- Pour over noodles, add in mint and toss to combine.
