Chicken Satay Noodles
Description
This recipe involves marinating boneless, skinless chicken thighs in a peanut butter-based sauce blended with boiling water, fish sauce, chili garlic sauce, ground coriander, turmeric, and cumin, providing a fragrant and mildly spiced satay flavor. After marinating for several hours, the chicken is threaded onto soaked wooden skewers and grilled until cooked through. Meanwhile, cooked spaghetti is combined with thinly sliced radish and cucumber, then dressed with a mixture of lime juice, brown sugar, salt, and pepper. Fresh minced mint adds brightness to the noodle salad. The combination complements the smoky, rich chicken for a well-rounded dish.
