Description

This recipe involves marinating boneless, skinless chicken thighs in a peanut butter-based sauce blended with boiling water, fish sauce, chili garlic sauce, ground coriander, turmeric, and cumin, providing a fragrant and mildly spiced satay flavor. After marinating for several hours, the chicken is threaded onto soaked wooden skewers and grilled until cooked through.   • 4 chicken thigh chunked, boneless, skinless
  • 3 tablespoons peanut butter creamy
  • 3 tablespoons water boiling
  • 1 tablespoon fish sauce
  • 1 tablespoon Chili garlic sauce
  • 1 teaspoon ground coriander
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon cumin
  • 8 ounces spaghetti pasta cooked
  • 10 radish thinly sliced
  • 2 cucumber thinly sliced, mini
  • 1 lime juiced
  • 1 teaspoon brown sugar
  • kosher salt to taste
  • black pepper to taste
  • 1 tablespoon mint minced, fresh

Instructions

  1. In a medium sized mixing bowl add chunked chicken thighs.
  2. In a small mixing bowl add peanut butter, boiling water, fish sauce, chili garlic sauce, ground coriander, turmeric, and cumin. Whisk until smooth.
  3. Pour over chicken and let marinate for at least 4 hours or up to 24 hours.
  4. When you're ready to make your chicken soak 4 long wooden skewers in water for about an hour.
  5. Thread an equal amount of the meat onto the skewers.
  6. Grill on a preheated grill for about 10 minutes or until the chicken is fully cooked.
  7. While the chicken rests make your noodles.
  8. In a medium sized mixing bowl add cooked noodles, radishes and cucumbers.
  9. In a small bowl whisk together lime juice, brown juice, kosher salt and black pepper.
  10. Pour over noodles, add in mint and toss to combine.
