Chicken Skewers In The Oven, stove top, broil or grill
These Chicken Skewers are marinated in a spice blend featuring brown sugar alternative, chipotle chili, adobo sauce, and cilantro, offering a smoky, sweet, and mildly spicy flavor. The chicken is threaded onto skewers and cooked using various methods including oven baking, broiling, stove top grilling, or outdoor grilling, providing flexibility in preparation.
Ingredients
- 2 pounds chicken tenders or boneless chicken breasts trimmed
- 1/4 cup brown sugar alternative golden monk fruit
- 2 tablespoons cilantro minced, leaves
- 1 Chipotle chili canned or jarred, diced
- 2 teaspoons chipotle adobe sauce
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper ground
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
Instructions
- Prepare chicken if not using chicken tenders. To prepare, slice chicken breasts in 1/2-inch strips (cut across the grain).
- In a large mixing bowl mix together the brown sugar, salt, pepper, chile powder, garlic powder, chipotle chili and adobo sauce.
- Pour sauce over chicken and mix to ensure all pieces are layered with the sauce. Cover and place in the refrigerator for a minimum of 30 minutes and up to 24 hours.
- Thread each chicken piece with a wooden skewer.
- Lightly coat the baking rack with cooking spray. Place each chicken skewer on the rack.
- Adjust the oven rack to the upper middle. Place prepared chicken skewers in a preheated oven at 375°F.
- Bake for 10 minutes, then flip skewers over and bake an additional 5 minutes or until chicken reaches 165°F internal temperature. Broil for 1-2 minutes on each side if desired.
- Serve with a dipping sauce or side dish.
Notes
- Broil chicken by placing the rack about 6 inches from heat; broil 2-3 minutes per side.
- For stove top, warm a grill skillet over medium heat and cook chicken 2-3 minutes per side.
- When grilling, lightly grease the grate and cook similarly to stove top timing.
