Chicken Skewers In The Oven, stove top, broil or grill

These Chicken Skewers are marinated in a spice blend featuring brown sugar alternative, chipotle chili, adobo sauce, and cilantro, offering a smoky, sweet, and mildly spicy flavor. The chicken is threaded onto skewers and cooked using various methods including oven baking, broiling, stove top grilling, or outdoor grilling, providing flexibility in preparation.

Description

The recipe starts with boneless chicken tenders or breasts cut into strips and marinated in a mixture containing brown sugar alternative, chipotle chili, adobo sauce, and spices such as garlic powder, chili powder, and salt. This marinade infuses a sweet, smoky, and mildly spicy flavor throughout the chicken.

After marinating for at least 30 minutes, the chicken pieces are skewered and cooked on a baking rack at 375°F for about 15 minutes, flipping midway to ensure even cooking. Optional broiling adds a slight char. Stove top and outdoor grill methods require similar timing over medium heat, achieving a cooked chicken with a slightly caramelized exterior.

The skewers can be served with a dipping sauce or side dishes, offering versatile meal options. Adjustments in cooking method allow for indoor or outdoor preparation based on availability and preference.

Broiling requires the rack to be near the heat source for quick cooking, stove top grilling uses a preheated skillet, and outdoor grilling suggests lightly greasing the grill grate for best results.

Ingredients

Servings
  • 2 pounds chicken tenders or boneless chicken breasts trimmed
  • 1/4 cup brown sugar alternative golden monk fruit
  • 2 tablespoons cilantro minced, leaves
  • 1 Chipotle chili canned or jarred, diced
  • 2 teaspoons chipotle adobe sauce
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon black pepper ground
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder

Instructions

  1. Prepare chicken if not using chicken tenders. To prepare, slice chicken breasts in 1/2-inch strips (cut across the grain).
  2. In a large mixing bowl mix together the brown sugar, salt, pepper, chile powder, garlic powder, chipotle chili and adobo sauce.
  3. Pour sauce over chicken and mix to ensure all pieces are layered with the sauce. Cover and place in the refrigerator for a minimum of 30 minutes and up to 24 hours.
  4. Thread each chicken piece with a wooden skewer.
  5. Lightly coat the baking rack with cooking spray. Place each chicken skewer on the rack.
  6. Adjust the oven rack to the upper middle. Place prepared chicken skewers in a preheated oven at 375°F.
  7. Bake for 10 minutes, then flip skewers over and bake an additional 5 minutes or until chicken reaches 165°F internal temperature. Broil for 1-2 minutes on each side if desired.
  8. Serve with a dipping sauce or side dish.

Notes

  • Broil chicken by placing the rack about 6 inches from heat; broil 2-3 minutes per side.
  • For stove top, warm a grill skillet over medium heat and cook chicken 2-3 minutes per side.
  • When grilling, lightly grease the grate and cook similarly to stove top timing.
