Ingredients

Chicken Souvlaki
  • 5 chicken thighs , boneless and skinless
  • 1/3 cup olive oil
  • 1 lemon , juiced, and zested
  • 3 cloves garlic , minced
  • 2 teaspoons dried oregano
  • 1 teaspoon kosher salt
Tzatziki Sauce
  • 2 cups plain whole-milk Greek yogurt
  • 1 cucumber , peeled, de-seeded, and grated
  • 1 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 2 cloves garlic, minced
  • 1/4 teaspoon kosher salt

Instructions

  1. Cut the chicken thighs (or breasts if desired) into 1" chunks.
  2. Place into a large covered container or large ziplock bag.
  3. In a medium bowl whisk together the olive oil, lemon juice, lemon zest, garlic, oregano, and salt.
  4. Pour over the chicken, coat well, and refrigerate for at least 2 hours.
  5. Add chicken skewers to a bowl or tray of water while the chicken is in the fridge.
  6. Remove skewers from the water when you take the chicken out of the refrigerator.
  7. Add 5-6 pieces of chicken to each skewer.
  8. Add to a hot grill on medium-high heat and cook for 8-10 minutes on each side, until chicken is cooked through.
Tzatziki Sauce
  1. Mix all ingredients together and refrigerate while the chicken is marinating.
