Ingredients

  • 8 ounces Spaghetti
  • 1 pound boneless skinless chicken breast tenders
  • salt and pepper to taste
  • 1 teaspoon Greek seasoning
  • 2 tablespoons olive oil
  • 1/2 small onion
  • 2 cloves garlic minced
  • 3 cups baby spinach
  • 1 Roma tomato chopped
  • 1/2 cup bleu cheese crumbled

Instructions

  1. Cook spaghetti according to package directions. Drain and set aside.
  2. Season chicken breast tenders with salt, pepper, and greek seasoning.
  3. In a large skillet over medium heat, heat oil, then add chicken and cook for about 5 - 7 minutes. Turn and cook for another 5 - 7 minutes. Remove from skillet.
  4. Add another tablespoon oil and saute chopped onions for about 5 minutes. Add minced garlic and cook for about 1 minute.
  5. Add spinach and cook down for about 3 minutes until spinach is wilted.
  6. Place cooked pasta on a plate. Top with the spinach, garlic and onions. Top with cooked chicken.
  7. Sprinkle with blue cheese and chopped tomatoes.
  8. Serve hot.
