Ingredients

  • 2 cups Cooked Chicken Breast diced or shredded
  • 1 cup diced apple Honeycrisp or Granny Smith
  • 1 cup seedless grapes halved
  • ½ cup celery diced
  • ¼ cup Chopped Pecans or walnuts
  • ¼ cup plain greek yogurt
  • 1 tbsp mayonnaise optional, for extra creaminess
  • 1 tbsp lemon juice
  • salt and pepper to taste
  • fresh herbs like parsley or dill for garnish

  1. Prepare the Dressing: In a small bowl, mix together the Greek yogurt, mayonnaise (if using), lemon juice, salt, and pepper.
  2. Combine Ingredients: In a large mixing bowl, combine the diced chicken, apple, grapes, celery, and walnuts.
  3. Toss Salad: Pour the dressing over the salad ingredients and toss until everything is well coated. Adjust salt and pepper to taste.
  4. Serve and Enjoy: Garnish with fresh herbs, if desired. Serve on a bed of lettuce, as a sandwich, or with whole-grain crackers!

Notes
