Chicken Yakhni
Chicken Yakhni is a slow-simmered broth rich with whole spices like black cardamom and cinnamon, infused with garlic, ginger, and garam masala alongside tender chicken pieces. This clear, aromatic soup combines the warmth of traditional spices with a subtle depth from the addition of cumin and freshly cooked onions, resulting in a comforting and nuanced chicken broth suitable for sipping or serving with rice.
Ingredients
- 50 ml olive oil
- 750 g chicken
- 1 onion
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp salt
- 2 tsp black pepper
- 1 tsp garam masala
- 1 tsp cumin powder
- 2 black cardamom Bari Elaichi
- 1- inch cinnamon Darchini
- 1.5 litre water
Instructions
- Heat up the olive oil in a pan on medium pan until hot
- Add the black cardamom pods, cinnamon sticks, garlic paste, and ginger paste then sauté for 1-2 minutes
- Add the finely chopped onions and cook for 4-5 minutes until softened
- Add the chicken and cook for 3-4 minutes until colour changes
- Add the salt, black pepper, garam masala, and cumin powder then cook the spices for 5-6 minutes
- Add the water and mix then cover and cook for 1 hour on medium heat
- Serve immediately and enjoy!
