Description

Chicken Yakhni is prepared by gently frying whole spices such as black cardamom and cinnamon in olive oil, releasing their fragrance before adding garlic and ginger pastes. Finely chopped onions soften in the spiced oil, providing a sweet foundation. Chicken pieces are then added and cooked until their color changes, after which powdered spices including garam masala and cumin powder are introduced and cooked briefly to blend their aromas.

The mixture is combined with water and simmered for an hour, during which the chicken releases flavor and tenderizes in the aromatic broth. The result is a clear, intensely spiced chicken stock with a balanced warmth from the spices and a subtle sharpness from garlic and ginger pastes. Ingredients

  • 50 ml olive oil
  • 750 g chicken
  • 1 onion
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp salt
  • 2 tsp black pepper
  • 1 tsp garam masala
  • 1 tsp cumin powder
  • 2 black cardamom Bari Elaichi
  • 1- inch cinnamon Darchini
  • 1.5 litre water

Instructions

  1. Heat up the olive oil in a pan on medium pan until hot
  2. Add the black cardamom pods, cinnamon sticks, garlic paste, and ginger paste then sauté for 1-2 minutes
  3. Add the finely chopped onions and cook for 4-5 minutes until softened
  4. Add the chicken and cook for 3-4 minutes until colour changes
  5. Add the salt, black pepper, garam masala, and cumin powder then cook the spices for 5-6 minutes
  6. Add the water and mix then cover and cook for 1 hour on medium heat
  7. Serve immediately and enjoy!
