Chickpea and Quinoa Burgers with Halloumi

If you're after something a little different, then I urge you to make these chickpea and quinoa burgers. And don't forget the secrete topping - halloumi. .

Ingredients

  • ¼ cup quinoa dried
  • 400 g chickpeas drained and rinsed
  • 1 teaspoon ground cumin
  • 2 tablespoon flat leaf parsley finely chopped
  • 1 tablespoon mint finely chopped
  • 1 tablespoon olive oil
  • 1 teaspoon pomegrantae molasses
  • 1 egg
  • 1 teaspoon salt
  • 1 teaspoon pepper
Burger condiments:
  • halloumi slices cooked and grilled
  • Brioche buns toasted
  • salad ingredients
  • relish

Instructions

  1. Preheat your oven to 180 deg C and line a baking tray with baking paper.
  2. Cook the dried quinoa according to package instructions and set aside.
  3. Combine the chickpeas, cumin, herbs, olive oil, molasses, egg and seasoning in a food processor and process until combined. Transfer this mixture to a bowl and add in the cooked quinoa and combine. Shape into six patties measuring approx. 8-9cm in diameter.
  4. Place the patties on the baking tray and cook for 30 mins. ensuring to turn them over halfway.
  5. Construct the burgers with your choice of salad on the bottom, followed by the chickpea and quinoa burger, grilled halloumi and relish.
