Chickpea Chocolate Chip Cookies

Ingredients

  • 15 ounce can chickpeas
  • 2 teaspoons vanilla extract
  • ¾ cup peanut butter creamy
  • ½ cup maple syrup
  • 1 teaspoon baking powder
  • ½ cup dairy-free mini chocolate chips

Instructions

PREP OVEN AND BAKING SHEET:

  1. Move the oven rack to the middle position.
  2. Preheat oven to 350 F°.
  3. Line a baking sheet with parchment paper.
MAKE BATTER:
  1. Remove the ‘skins’ on the chickpeas. (This step is optional but helps make the dough creamier.)
  2. Place the chickpeas and all other ingredients, except chocolate chips, in your food processor.
  3. Process until creamy.
  4. Fold in the chocolate chips.
  5. Use your cookie scoop to scoop out your dough onto the cookie sheet.
BAKE COOKIES:
  1. Bake for 12 minutes.
  2. Allow to cool for 45 minutes on a cooling rack before enjoying.
