Ingredients
- 15 ounce can chickpeas
- 2 teaspoons vanilla extract
- ¾ cup peanut butter creamy
- ½ cup maple syrup
- 1 teaspoon baking powder
- ½ cup dairy-free mini chocolate chips
Instructions
PREP OVEN AND BAKING SHEET:
- Move the oven rack to the middle position.
- Preheat oven to 350 F°.
- Line a baking sheet with parchment paper.
MAKE BATTER:
- Remove the ‘skins’ on the chickpeas. (This step is optional but helps make the dough creamier.)
- Place the chickpeas and all other ingredients, except chocolate chips, in your food processor.
- Process until creamy.
- Fold in the chocolate chips.
- Use your cookie scoop to scoop out your dough onto the cookie sheet.
BAKE COOKIES:
- Bake for 12 minutes.
- Allow to cool for 45 minutes on a cooling rack before enjoying.
