Ingredients

  • 2 cups chickpeas drained and rinsed canned or cooked dried
  • 2 cups corn
  • 1 cup cucumber seeded and diced
  • 3 tablespoon olive oil
  • 2 cloves garlic minced
  • ½ c. pecans chopped, toasted
  • ¼ cup lemon juice fresh
  • ¼ cup cilantro chopped, fresh
  • ¼ cup feta cheese
  • salt to taste
  • black pepper to taste

Instructions

  1. In a large bowl mix corn, chickpeas, cucumber, and pecans.
  2. Mix in olive oil, garlic, lemon juice and cilantro
  3. Toss in feta cheese.
  4. Chill until ready to serve.
