Ingredients

  • 29 ounces canned chickpeas , drained and rinsed
  • 1 cucumber , peeled and chopped
  • 2 cups grape tomatoes , halved
  • 1 red bell pepper , chopped
  • 1/2 red onion , finely diced
  • 1/2 cup parsley finely chopped
  • 2 avocados , pitted and diced
Red Wine Vinaigrette Dressing:
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  1. Add the chickpeas, cucumber, tomatoes, bell pepper, red onion, parsley, and avocados to a large bowl.
  2. In a small bowl whisk together the olive oil, red wine vinegar, dried oregano, garlic powder, salt, and black pepper.
  3. Immediately add to the salad and toss together gently.
