Chicory salad with peach, buckwheat and hazelnuts

Nutritious salad with chicory, whole buckwheat grains, peach and hazelnuts. With an almond paste, honey and extra virgin oil dressing.

Ingredients

  • 1 cup buckwheat whole grains
  • 2 tablespoons maple syrup NO honey
  • 2 cups Belgian endives / chicory cut into slices
  • 2 peaches
  • 2 handsful hazelnuts
  • 2 tablespoons raw honey
  • 1 tbsp extra virgin olive oil
  • 1 tbsp almond butter

Instructions

  1. Boil plenty of water in you cooking pot. Add the buckwheat and cook for 8 minutes.
  2. After cooking, rinse the buckwheat immediately with cold water and let it drain.
  3. While the buckwheat is cooking: cut the peaches into nice slices on either side of the pit. These go on top. Cut the rest around the pit into small pieces. Those are to stir in with the buckwheat.
  4. Wash and cut the chicory into strips.
  5. Mix 1 tablespoon of honey, the oil and the almond paste with the buckwheat. Mix the chicory and small peach pieces of peach with the buckwheat.
  6. Divide the buckwheat among the plates. Place the peach slices on top. Sprinkle the hazelnuts over the peaches. Garnish with the remaining honey.

Notes

  • You can either use raw hazelnuts or roasted (storebought or roast them yourself).
