Ingredients

  • 1 pound ground beef
  • 1 yellow onion diced (medium-sized)
  • ½ green bell pepper diced
  • 2 cloves garlic crushed
  • 1 tablespoon chili powder (plus more to taste)
  • ½ teaspoon salt
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 2 cups diced tomatoes
  • ½ cup salsa
  • 1 can red kidney beans do not drain (16-ounces)

Instructions

  1. In a large pot, cook beef, onion, green pepper, and garlic over medium-high heat for about 8 minutes. Stir occasionally until beef is brown; drain and return to heat.
  2. Stir in remaining ingredients except for the beans. Heat to boiling. Reduce heat to low; cover and simmer 1 hour, stirring occasionally.
  3. Stir in beans. Heat to boiling. Reduce heat to low; simmer uncovered about 20 minutes, stirring occasionally until desired thickness is reached.
