Ingredients
Chili Sauce:
- 1 tablespoon olive oil
- 1 small yellow onion finely chopped
- 1 pound (450 grams) 90% lean ground beef
- 1 tablespoon tomato paste
- 1 tablespoon chili powder
- 2 teaspoons onion powder
- 1 1/2 teaspoons garlic powder
- 1/2 teaspoon ground cumin
- Pinch cayenne pepper optional
- 1 can (15 ounces/425 grams) tomato sauce
- salt and ground black pepper to taste
Hot Dogs:
- 8 all-beef jumbo hot dogs
- 8 hot dog buns sliced
- grated cheddar cheese for topping, optional
- pickled jalapenos for topping, optional
- Green or red onions finely chopped, for topping, optional
Instructions
To make the chili sauce:
- In a large skillet, heat the oil over medium-high heat until it shimmers.
- Add the chopped onion and cook until soft and translucent, 2 to 3 minutes.
- Add the ground beef and cook until it is browned, breaking up any large pieces, about 8 minutes. Drain the excess fat, if necessary.
- Stir in the tomato paste; chili, onion, and garlic powders; cumin; and cayenne (if using) until thoroughly combined.
- Cook for 2 minutes, then stir in the tomato sauce. Reduce heat to low and simmer for 10 to 12 minutes to let the flavors meld.
- Taste and adjust seasoning.

Meanwhile, cook the hot dogs:
- Heat a grill to medium-high heat. Place the hot dogs on the grates and grill, turning once, until well-marked and heated through, about 2 minutes per side.
- Turn the heat off and heat the buns on the warm grill until lightly toasted, about 2 minutes.
To serve:
- Place the hot dogs in the buns and smother them with the chili sauce. Top with cheddar cheese, pickled jalapeños, and green or red onions, if desired.
