Chili Lime Rice (Jalapeno)

This Jalapeno Lime Rice combines the bright flavors of lime with the spicy touch of jalapeno. It's perfect as a side or in your burrito bowls.

Ingredients

  • 1 tbsp butter
  • 1-2 whole jalapeños depending on how spicy you want it, chopped
  • 1 cup rice basmati or jasmine
  • 1 pinch salt
  • 1 whole lime juiced
  • 2 cups chicken stock or water
  • 1 handful cilantro chopped

Instructions

  1. Add butter to a large skillet and melt.
  2. Add in your jalapeno and saute briefly, about 2-3 minutes.
  3. Add in your rice and stir frequently. Toast rice for about 1 minute.
  4. Add in a pinch of salt and half of the lime juice.
  5. Add in the chicken stock and stir to combine.
  6. Cover with a lid and allow it to simmer for 15-20 minutes, until all the liquid is absorbed.
  7. Uncover the rice and add in the remaining lime juice and cilantro.
  8. Stir to combine and serve it up!
