Chinese Chicken Pasta Salad with Sesame Dressing

A delicious and flavorful salad that is packed with leafy romaine, red cabbage, chicken, carrots, and almonds.  The pasta adds a unique and perfect texture and the sesame dressing is perfect on top!

Ingredients

  • 2 cups cooked and sliced chicken
  • 3 cups chopped romaine lettuce
  • 6 ounces cooked rotini pasta, about 2 cups
  • 1 cup shredded red cabbage
  • ½ cup sliced red onion
  • ½ cup shredded carrots
  • ¼ cup roasted almonds
  • ⅓ cup Chow Mein noodles
  • salt and pepper to taste
Sesame Dressing
  • 2 tablespoons vegetable oil
  • 6 tablespoons rice vinegar
  • 1 teaspoon sesame oil
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame seeds
  • ½ teaspoon fresh ground pepper
  • ⅛ teaspoon salt

Instructions

  1. In a large bowl combine 3 cups chopped romaine lettuce, 2 cups cooked and sliced chicken, 6 ounces cooked rotini pasta, 1 cup shredded red cabbage,½ cup sliced red onion, ½ cup shredded carrots, ¼ cup roasted almonds, and ⅓ cup chow mein noodles. Toss and season with salt and pepper.
Dressing
    Cup of Yum
  1. In a medium bowl, whisk together 2 tablespoons vegetable oil, 6 tablespoons rice vinegar, 1 teaspoon sesame oil, 1 tablespoon honey, 1 teaspoon Dijon mustard, 1 tablespoon soy sauce, 1 tablespoon sesame seeds, ⅛ teaspoon salt and ½ teaspoon fresh ground pepper.
  2. Pour the dressing over the salad and toss to combine. Alternatively, you can pour the dressing over individual servings.
